Baked Zucchini "Fries"

Ingredients
- 3 large zucchinis
- 3/4 cup panko breadcrumbs
- 2 eggs
- 1 tbsp olive oil
- 1/2 tsp garlic powder (optional)
- 1/2 tsp garlic powder (optional)
- Salt and black pepper, to taste
Instructions
- Preheat oven to 425°F. Line a baking sheet and lightly grease.
- Beat eggs in a bowl.
- Slice zucchini into strips.
- Dip in egg, then coat in breadcrumbs.
- Place on baking sheet and season.
- Bake 30-35 mins, flipping once, until crisp.
