Ingredients
- 2 lbs sirloin steak
- 2-3 cucumbers, thinly sliced
- 1 mango, chopped
- 1 medium avocado, sliced
- 1 oz salted peanuts, chopped
- 2 tbsp low sodium soy sauce
- 1/4 cup pickled sushi ginger
- 1/2 cup chopped fresh herbs
- 2/3 cup lime juice
- 1 tbsp toasted sesame oil
- 1 tbsp fresh grated ginger
- 2 tbsp pickled ginger juice or vinegar
- 1 tsp honey
- Chili flakes, to taste
- Cooked rice, for serving (optional)
Instructions
- For the dressing, combine 1/3 cup lime juice, sesame oil, fresh ginger, pickled ginger juice or vinegar, honey and chili flakes in a jar and mix. Set aside.
- In a bowl, toss the steak with soy sauce and 2-3 tbsp of the dressing.
- Heat a skillet over medium heat. Cook the steak for 5-8 mins per side (for medium-rare). Remove and let rest for 5-10 mins, then slice.
- In a bowl, toss cucumbers with pickled ginger and about 3 tbsp dressing. In another bowl, toss mango with herbs, lime juice and chili flakes.
- Serve sliced steak over rice (optional). Top with cucumber, mango, avocado and peanuts. Drizzle with remaining dressing and serve.
