Ingredients
- 2 1/4 cups rolled oats
- 1/2 tsp salt
- 1 tsp pumpkin spice
- 1/4 cup chia seeds
- 1/2 cup pumpkin puree
- 1/4 cup peanut butter
- 1 tbsp maple syrup
- 1/3 cup semi-sweet chocolate chips
Instructions
- Grind oats in a food processor for about 1 min until mostly broken down.
- Add remaining ingredients (except chocolate chips) and mix until a thick, slightly sticky dough forms.
- Add chocolate chips and pulse briefly until evenly distributed.
- Roll into balls using a tablespoon measure (about 20-22 balls)
- Refrigerate for at least 1 hour to set before serving.
