Shrimp and White Beans with Spinach and Feta

Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 1/2 oz reduced fat feta cheese, crumbled
- 5 cups baby spinach
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1/2 cup low sodium chicken broth
- 2 tsp fresh sage, chopped
- 2 tbsp balsamic vinegar
- 1 tsp olive oil
- Salt, to taste
Instructions
- Heat 1/2 tsp olive oil in a large skillet over medium heat. Add shrimp with a pinch of salt and cook for 2-3 mins. Remove and set aside.
- Add remaining oil to the skillet. Cook onion, garlic and sage for about 4 mins, stirring occasionally until softened.
- Stir in balsamic vinegar and cook for 30-45 seconds. Add chicken broth, bring to. aboil and cook for 2 mins.
- Add beans and spinach, cooking until spinach wilts, about 2-3 mins.
- Remove from heat, stir shrimp back in and top with feta cheese. Divide into bowls and serve.
