Ingredients
- 1.25 oz chicken sausage
- 1 large egg
- 2 tbsp egg whites
- 3 tbsp 2% cottage cheese
- 2 tbsp scallions, chopped
- 1 oz reduced fat shredded cheddar
- 1 low carb tortilla (7-inch)
- Salt and pepper, to taste
- Optional: Salsa or guacamole (not included in macros)
Instructions
- Cook sausage in a non-stick skillet until browned. Set aside.
- In a bowl, whisk egg, egg whites, cottage cheese, scallions, salt and pepper.
- Cook eggs in skillet.
- Heat a clean skillet and place tortilla in pan.
- Add half the cheese, then eggs and sausage, then remaining cheese.
- Fold tortilla and cook until golden and cheese is melted.
- Slice and serve.
