Ingredients
- 4 large eggs
- 4 teaspoons light mayo
- 1/2 teaspoon mustard
- 2 tbsp scallions or chives, chopped
- Salt and black pepper, to taste
Instructions
- Hard boil the eggs, then rinse under cold water and peel.
- Separate yolks and discard 2 yolks.
- Chop the eggs and add to a bowl.
- Mix in mayo, mustard, scallions, salt and pepper.
- Stir until well combined.
