Ingredients
- 16 oz egg whites
- 150 g 2% cottage cheese
- 2 tbsp red onion, chopped
- 2 tbsp scallions, chopped
- 1 bell pepper, chopped
- 1/2 cup broccoli
- 6 slices turkey bacon, cut in half
- 40 g shredded reduced fat cheddar cheese
- Seasoning salt, to taste
- Garlic powder, to taste
- Olive oil spray
Instructions
- Preheat oven to 350°F.
- Sautee scallions and bell pepper in a pan with a little olive oil spray for about 5 minutes. Add broccoli and cook for 1 more minute.
- In a bowl, combine egg whites, cottage cheese, garlic powder and seasoning salt. Mix well, then stir in the cooked vegetables.
- Line a muffin tin with half slices of turkey bacon around the edges of each cup.
- Pour the egg mixture into each cup and top with shredded cheese.
- Bake for about 25 minutes, or until set.
